Chuy’s southwestern enchiladas is what I order every single time, even when I swear I will try something different. Egg on top of chicken enchiladas made with blue-corn tortillas. Full for days.

Whenever I find myself home from church on Sundays with a sick child and therefore, a little extra time, I thoroughly enjoy pursuing your finds of the week. Thanks for taking the time to post these.
full for days indeed! i love that item on their menu also!

Such a beautiful sunny day in Seattle yesterday–we just chilled by taking the kids to ride their scooter and bike around Green Lake and then spent the afternoon at the zoo (we have annual passes because it’s only a mile from us). Lovely. I love the atmosphere of holiday weekends, even though my husband will have to do some work tomorrow.
Wow! So happy you are still blogging, Rachel. Your site is one of the handful on my reader that I just simply flat.out.love.
Happy birthday to Miss Lane and happy Memorial Day weekend to your whole family! Try and stay cool!!
We have had really sunny summerdays lately so we’ve been spending the weekend in our garden and on the beach. Yesterday we tried out some recipies with dandelions and a south african dish and today we have celebrated my birthday.
Happy Birthday, Lane! I know how much I loved her post last year; maybe it should be a birthday tradition?

Rachel, thanks so much for including me!
And a question: are you still gluten-free? I am, and I’ve been a little leery of venturing into our new local Chuy’s for fear of being glutened. This picture makes me optimistic!

You’re welcome, and I also liked your writing about not using sarcasm.
I don’t know if Chuy’s is safe enough for our daughter who has Celiac and is extremely sensitive, but the blue-corn tortillas are made without flour so my gluten-intolerant husband can have them.
Thanks about the writing
I’ve read that Chuy’s CAN do gluten-free dining–even for celiac diners–if you come at a slow time. I didn’t know that tip about the blue corn tortillas, though. Thanks for sharing, because I love tex-mex and have heard raves about our new Chuy’s!
Cook-out last night with my sister and her husband, who’s recovering from recent surgery to remove prostrate cancer. A stop by the DFW national cemetery, to remember my brother (he served in the one where the US veterans that returned alive were ignored or spit on). Time spent with my sweet husband, being grateful for every little moment we have, to do anything we want, and for every one who’s ever participated in our opportunity to do that. And – a movie, later. A lovely weekend.
We used to have a Chuy’s 3 miles down the road. I always got the sliders. Sadly it got shut down by INS.
We’ve had a busy, busy week – but fun busy. Graduation parties, baby showers, pool parties, bbqs, etc.
Happy birthday Lane, and happy blogiversary to you!

Rachel, Thanks for the brilliant interview idea. I’ll definately do this for my daughters scrap book. I got a surprise to see our girls have the same school bag. Its funny to see something familar on your blog – we live so far away in New Zealand.
:}
Ah, Chuy’s. Making me drool all the way from Taiwan. I grew up on blue corn tortillas and miss them so much.
I, too, found myself home with a sick child on a Sunday morning and enjoyed the good reads.

We’re celebrating our oldest turning four today! Also trying to fend off labor for a few more days. Odd combo, but that’s what has dominated my weekend:)

Oh, I’d give anything for that meal above! I live in the South but am originally from out West and I miss the Mexican food most of all. They do have Mexican food here but for me, nothing beats the food further west.
Happy Happy Birthday dear Lane! I hope the family enjoys a wonderful summer!
What a delicious meal! Aww! Happy Birthday Lane!
Time really flies, I really love your blog Rachel. Happy 4 years of blogging.
I think it was No Spend Month that first got my attention. I look forward to visiting here every week, always something useful or inspiring.
Hope you and your family had a wonderful weekend.
We love Chuy’s! Especially the jalapeño ranch. Thanks for the recommendations.
Hi Rachel! Just checked my stats and saw the traffic leading my way — thank you for including my post in your round up. How lovely it is to be in good company
Some great stuff over here. I’ve been poking around all afternoon. Keep up the great work!
I order the southwestern enchiladas every.single.time also! I’ve never had anything else there! Well, besides the chips and the jalapeño ranch, which I’m obsessed with
thanks for the links. they are very inspiring.
ah Chuy’s, how I miss you! Chips and jalepeno ranch to start and Chuy’s Special nearly every single time. Kelly
